HOW TO COOK IT
Sizzle the sausages
Make the masala
Place the oil, onion, garlic, ginger and bay leaf into a saucepan and sauté until golden. Add the garam masala, cinnamon, cardamom, coriander and chilli flakes and gently simmer for 2 minutes stirring constantly. Add the stock and tomatoes, simmer and reduce by half (15mins approx.). Add the coconut milk then taste and season if required. Add the cauliflower and green chilli, then simmer for further 4 minutes. Cover the dish with chopped coriander.
SERVE
With your choice of basmati rice, naan, papadums and a little mango chutney. If you’re hungry eat the lot!

- 1 small onion, very finely chopped
- 2 cloves garlic, finely chopped

- 1 mild green chilli, seeds removed and finely sliced
- 10 sprigs fresh coriander, roughly chopped
